Sweet Pepper Relish
Ingredients
- 7 1/2 cups diced sweet red pepper
- 6 1/2 cups diced green pepper
- 6 cups diced onion
- 2 qts. boiling water
- 3 cups cider vinegar
- 2 1/2 cups sugar
- 1 tbls. canning salt
- 2 tsp. mustard seed
- 1 tsp. celery seed
Directions
In a large container, combine peppers and onions. Cover with water. Let stand for 20 minutes; drain well. In a large kettle, combine remaining ingredients; bring to a boil. Add pepper mixture; cover and simmer for 20 minutes. Pour hot mixture into hot jars, leaving ¼-inch headspace. Adjust lids. Process for 15 minutes in a boiling water bath. Yields 7 pints.
