Sweet Pepper Relish

  • 7 1/2 cups diced sweet red pepper
  • 6 1/2 cups diced green pepper
  • 6 cups diced onion
  • 2 qts. boiling water
  • 3 cups cider vinegar
  • 2 1/2 cups sugar
  • 1 tbls. canning salt
  • 2 tsp. mustard seed
  • 1 tsp. celery seed


  1. In a large container, combine peppers and onions. Cover with water. Let stand for 20 minutes; drain well. In a large kettle, combine remaining ingredients; bring to a boil. Add pepper mixture; cover and simmer for 20 minutes. Pour hot mixture into hot jars, leaving ¼-inch headspace. Adjust lids. Process for 15 minutes in a boiling water bath. Yields 7 pints.
