Heat oven to 350°. Cut tops from peppers and deseed. Dice pepper tops, set aside. Cook peppers in boiling water about five minutes; drain. Brown ground beef with onion and diced pepper tops. Add salt and pepper. In a small saucepan, heat tomato juice. Add rice to tomato juice; cook until rice becomes tender. Add to meat mixture; stuff into peppers. Place stuffed peppers upright in a casserole dish. Bake for 15 minutes. Top with favorite cheese and return to oven for 10 minutes. Yields 6 servings.
