Rolled Enchiladas

  • 2 lbs. ground beef
  • 1/2 cup chopped onion
  • 1 envelope taco seasoning mix
  • 1/2 cup water
  • 1 (16 oz) can refried beans
  • 12 corn tortillas
  • 1 (8oz) jar taco sauce
  • 2 cups shredded cheddar cheese
  • 4 cups shredded lettuce
  • 1 large tomato, chopped
  • 1 cup shredded cheese


  1. Brown beef in skillet; drain. Add onion, seasoning mix, water and refried beans. Mix well. Simmer for 5 minutes. Spoon into tortillas, and roll to enclose filling. Place seam side down in a greased 9x13-inch baking dish. Mix taco sauce and tomato sauce in a bowl. Spoon over tortillas. Sprinkle with 2 cups cheese. Microwave on high for 10 minutes. Sprinkle with remaining ingredients. Yields 12 servings.
