Idaho Chef's Salad


  • 2 cups great northern beans, cooked and drained
  • 1 cup thinly sliced celery
  • 1/2 tsp. pepper. divided
  • 1/2 cup evaporated milk
  • 1/2 cup vegetable oil
  • 3 tbls. cider vinegar
  • 2 tbls. chopped chives
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/2 tsp. dry mustard


  1. In a large salad bowl, combine beans, celery and ¼ tsp. pepper. Combine milk, oil, vinegar, chives, salt, sugar, mustard and remaining pepper; pour over beans and stir until coated. Chill and serve. Yields 8 servings.
