Calico Baked Beans


  • 1/2 lb. bacon
  • 1 large onion, chopped
  • 3/4 cup brown sugar
  • 3/4 cup spicy barbecue sauce
  • 2 tbls. vinegar
  • 2 tsp. dry mustard
  • 1 tsp. salt
  • Pepper, cumin, and coriander to taste
  • 1 (15 oz.) can black beans, drained
  • 1 (15 oz.) can red kidney beans, drained
  • 2 (15 oz.) cans great Northern white beans, drained


  1. Fry bacon and crumble; reserve grease. Brown onions in 2 tablespoons bacon grease. Mix onions with bacon, brown sugar, barbecue sauce, vinegar and spices. Add beans and stir. Cook in a slow cooker on low for 5 hours or on high for 3 hours, uncovering the last ½ hour, or bake in oven at 350° for 1 hour and 15 minutes. Yields 12 to 16 servings.
