Broccoli Cornbread
Ingredients
- 1 (10 oz.) package frozen, chopped broccoli
- 1 cup chopped onion
- 1 cup cottage cheese
- ½ cup melted butter
- 4 eggs, beaten
- 1 (7 oz.) package corn muffin mix
Directions
Heat oven to 400°. Combine broccoli and onion in glass bowl and microwave, covered, on high for 2 to 3 minutes or until broccoli thaws. Add cottage cheese, butter and eggs; mix well. Add muffin mix. Stir just until moistened. Pour into greased 9x9-inch baking pan. Bake for 35 minutes or until golden brown. Yields 9 servings.
