Black Bean and Pumpkin Chili
Ingredients
- 1 medium onion, chopped
- 1 medium sweet yellow pepper, chopped
- 3 garlic cloves, minced
- 2 tbls. olive oil
- 3 cups chicken broth
- 2 (15 oz.) cans black beans, rinsed and drained
- 2 1/2 cups cubed cooked turkey
- 1 (15 oz.) can solid-packed pumpkin
- 1 (14.5 oz.) can diced tomatoes, undrained
- 2 tsp. dried parsley flakes
- 2 tsp. chili poweder
- 1 1/2 tsp. dried oregano
- 1 1/2 tsp. ground cumin
- 1/2 tsp. salt
Directions
In a large skillet, sauté onion, yellow pepper and garlic in oil until tender. Transfer to a 5-quart slow cooker; stir in remaining ingredients. Cover and cook on low for 4 to 5 hours or until heated through. Yields 10 servings.
