Black Bean and Pumpkin Chili

Ingredients

  • 1 medium onion, chopped
  • 1 medium sweet yellow pepper, chopped
  • 3 garlic cloves, minced
  • 2 tbls. olive oil
  • 3 cups chicken broth
  • 2 (15 oz.) cans black beans, rinsed and drained
  • 2 1/2 cups cubed cooked turkey
  • 1 (15 oz.) can solid-packed pumpkin
  • 1 (14.5 oz.) can diced tomatoes, undrained
  • 2 tsp. dried parsley flakes
  • 2 tsp. chili poweder
  • 1 1/2 tsp. dried oregano
  • 1 1/2 tsp. ground cumin
  • 1/2 tsp. salt

Directions

  1. In a large skillet, sauté onion, yellow pepper and garlic in oil until tender. Transfer to a 5-quart slow cooker; stir in remaining ingredients. Cover and cook on low for 4 to 5 hours or until heated through. Yields 10 servings.
