Asparagus Beef Stir-Fry

  • 1 lb. beef tenderloin, cubed
  • 1 green onion, sliced
  • 2 garlic cloves, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbls. vegetable oil
  • 1 lb. fresh asparagus, trimmed and cut into 2-inch pieces
  • 1/2 lb. fresh mushrooms, sliced
  • 1/4 cup butter, cubed
  • 1 tbls. soy sauce
  • 1 1/2 tsp. lemon juice
  • Hot cooked rice


  1. In a wok or large skillet, stir-fry cubed beef, onion, garlic, salt and pepper in oil for 3 to 5 minutes. Remove from pan and keep warm. In the same pan, stir-fry asparagus and mushrooms in butter until asparagus is tender. Return beef mixture to pan. Stir in soy sauce and lemon juice; heat through. Serve with rice. Yields 4 servings.
