All-Day Soup
Ingredients
- 1 (1 1/2 lb.) beef flank stea, cut into 1/2-inch pieces
- 1 medium onion, chopped
- 1 tbls. olive oil
- 5 medium carrots, thinly sliced
- 4 cups cabbage, shredded
- 4 medium red potatoes, diced
- 2 celery ribs, diced
- 2 (14 oz.) cans diced tomatoes, undrained
- 1 (14 oz.) cans beef broth
- 1 (10 oz.) can condensed tomato soup, undiluted
- 1 tbls, sugar
- 2 tsp. Italian seasoning
- 1 tsp. dried parsley flakes
Directions
In a large skillet, brown steak and onion in oil; drain. Transfer to a 5-quart slow cooker. Stir in the remaining ingredients. Cover and cook on low for 8 to 10 hours or until meat is tender. Yields 8 servings.
